Carbone Dallas Brings Back Its Celebration Of Tomatoes Menu

The limited-time menu features Carbone classics alongside new iconic dishes

Carbone Dallas is once again paying homage to one of summer’s simplest pleasures: the tomato. Through the end of August, the restaurant’s seasonal Celebration of Tomatoes menu is back, featuring locally sourced, peak-season tomatoes prepared with the polish and flair Carbone is known for.

Peak Tomatoes, Carbone Style

The limited-time menu includes Carbone classics like the insalata caprese and spaghetti pomodoro, along with special offerings such as scallops riserva, veal milanese and the limited-edition lasagna verde. For an added touch of summer, the restaurant has introduced a signature caprese martini, made with tomato water and basil oil, designed to complement the menu’s bright, fresh flavors.

Carbone, named for its award-winning chef Mario Carbone, has earned a national reputation, not just for its refined takes on Italian-American fare, but for its celebrity following and iconic dishes. The Dallas location carries on the mid-century New York red-sauce joint tradition, but with an upscale twist.

Carbone Vino Joins DFW Restaurant Week

Next door at Carbone Vino, the Major Food Group team is gearing up for DFW Restaurant Week, which officially runs from August 4 to 10, with many restaurants extending participation through August 31. A special preview weekend kicks things off July 31 to August 3. More than 140 restaurants across North Texas will participate, with proceeds benefiting the North Texas Food Bank and Lena Pope.

For its 2025 DFW Restaurant Week menu, Carbone Vino is serving up a four-course, $99 experience that showcases the best of Major Food Group’s dining ethos: refined, timeless and unmatched.

The menu starts with crowd-pleasers like sweet and sour mini meatballs or Mario’s mozzarella sticks, followed by a pasta course with choices like the famed spicy rigatoni vodka, sweet corn ravioli, or mafaldini bolognese. Entrées include broiled shrimp fra diavolo, chicken parmigiano, salmon portofino or an optional upgrade to the 12oz ribeye tagliata. For dessert, guests can select either raspberry blackout cake or a selection of gelati. Optional sommelier-curated wine pairings, highlighting regions like Veneto, Puglia and Piedmont, round out the experience.

Whether you’re toasting tomato season or diving into a four-course prix fixe, Carbone and Carbone Vino are serving up a taste of summer in true Dallas style.
