Culinary maverick John Tesar is teaming up with Napa Valley’s iconic Chappellet Winery for an exclusive evening at Knife Italian inside The Ritz-Carlton Dallas, Las Colinas, where the food is fierce, the wine is legendary and the vibes are strictly first class.

A Five-Course Celebration of Flavor
Guests will enjoy a decadent five-course dinner served family-style, showcasing Knife’s signature dry-aged cuts and inventive Italian-influenced dishes. The evening opens with highlights like a mushroom pizza and lobster scampi, followed by oxtail ravioli with parmesan monte, aged balsamic and truffle.
The heart of the meal features Knife’s renowned 60-day dry-aged striploin and 120-day dry-aged ribeye, paired with classic sides like mashed potatoes, creamed spinach and mixed summer vegetables. A sweet finale awaits with flexi chocolate ganache and mignardise.
Perfect Pairings from Napa Valley
Each course will be expertly paired with wines from Chappellet’s award-winning portfolio. Guests can expect to sample the winery’s signature chenin blanc, Grower Collection chardonnay from Calesa Vineyard, cabernet franc, the iconic Pritchard Hill cabernet sauvignon and the Mountain Cuvée red blend.
Founded by Donn and Molly Chappellet, Chappellet Winery is one of the few remaining family-owned wineries in Napa Valley.
