Dallas foodies, get ready — Flock & Fresh is spreading its wings this winter at the Old Town Shopping Center. The new casual spot comes from Wan Kim, the CEO of Smoothie King and the mind behind acclaimed concepts like Nuri Steakhouse and JOA Grill.
Opening at 5500 Greenville Ave, Suite 205 in late 2025 or early 2026, Flock & Fresh will serve up a mix of crave-worthy flavors and wellness-minded dining, all in a modern setting.
Where Flavor Meets Flexibility
Kim describes Flock & Fresh as food designed for the modern food lover. Translation: quick, customizable and full of flavor.
“I wanted to create something that reflects how people really live and eat today — something quick but thoughtful, light but still full of flavor,” Kim said in an official statement. “It’s simple, honest food made to meet you where you are, for the days you want to indulge and the days you’re leaning into something lighter, all while using high-quality ingredients that cater to a variety of tastes.”

The menu is anchored by high-quality chicken — always cage-free, hormone-free and antibiotic-free — served however you like: grilled or crispy, in a sandwich, as tenders or topping a fresh salad. Add homemade sauces like curry ranch, K-sauce or the signature “Flock Sauce,” plus dressings like yuzu citrus and avocado ranch, and you’ve got plenty of ways to make it your own.
The Design
The restaurant’s look is just as carefully curated as its menu. Designed by Plan B Group (Royce Ring & Tom Weber), the 2,600-square-foot space seats 42 inside and another 42 on the greenery-framed patio.
Expect warm tones, curved walls and playful touches like a banquette canopy inspired by a modern chicken coop — yes, really. Murals and whimsical fixtures round out the vibe, while custom pickup shelving keeps things smooth for to-go diners.
When Flock & Fresh officially opens its doors, Dallasites will be able to stop by for lunch or dinner to experience Kim’s newest vision: simple, honest food that fits any appetite.
