This type of cranberry vinegar is particularly good on field greens or arugula with little or no olive oil. The sweetness offsets the bitterness of the greens. INGREDIENTS 6 cups red wine vinegar 2 pkgs.

My mother, Virginia Brewer, used to make a soup similar to this for our family but without the barley. She added corn instead. Unfortunately, I don’t have my mother’s recipe but this is the closest one I have been able to find that tastes like hers.

There are lots of variations of this Middle Eastern salad, but most of them contain way too many herbs for my liking, masking the flavor of the vegetables.
